So lets say in old domain you name was

barry shapiro/os/co and domain was oldcompany

if you add
barry shapiro/os/co@oldcompany as the last full name to the updated person doc it will resolve to the first name.

The other solution of leaving up a other server partition just for autofoward will work as well

One other way is if you dont want to host a second server requires some devevelopment

Create a non adjacent doc to old mail domain that points to a new cretaed blank db

Have a agent run on that db on new mail. The agent will take each mail and change old domain to new domain on all the users listed in the recipients field and then create that doc in the mail.box on the server and then delete the orginal doc.
